Answer:

Water is a good solvent for ionic compounds as the amount of energy released by forming ion-dipole interactions between water molecules and charged ions is sufficient to compensate for the amount of energy required to break ionic bonds (aka lattice energy) between charged ions in the ionic compound and hydrogen bonds between water molecules.

Water however, is not a good solvent for organic compounds and metals...
