Water is the universal solvent, because it is extremely polar. One side is negative, one side is positive. 

Being a universal solvent, water is extremely efficient at dissolving ionic compounds, such as table salt, NaCl.

Because water would not evaporation easy with water it will go slowley. It can help ur water not evaporation
