THE PHOSPHATE HEAD INTERACT WITH WATER. Phospholipids are made up of two major parts; a hydrophobic polar head group and a hydrophobic  tail. The polar head has one or more phosphate groups and is the part that faces the water when the molecules is put inside water; the hydrophobic tail which does not react with water will faces away from water.
